精對(duì)苯二甲酸親油性較大，易穿透細(xì)胞膜進(jìn)入細(xì)胞體內(nèi)，干擾細(xì)胞膜的通透性，抑制細(xì)胞膜對(duì)氨基酸的吸收；進(jìn)入細(xì)胞體內(nèi)電離酸化細(xì)胞內(nèi)的堿儲(chǔ)，并抑制細(xì)胞的呼吸酶系的活性，阻止乙酰輔酶A縮合反應(yīng)，從而起到食品防腐的目的。
